Description. Organic sparkling wine made from our grapes Pinot Noir (40%), Pinot Grigio (40%), Pinot Blanc (10%) and Chardonnay (10%): the vinification is done with a very short maceration on the skins. Both the first fermentation and the subsequent "presa di spuma" are made by indigenous yeasts. The refermentation takes place in "autoclave" with aging on the lees of 12 months (long Charmat). During this period the wine acquires a finer and more complex character thanks to the long contact with the yeast cells.
Color. Rosé intense.
Tasting Notes. Lively and fresh, at nose cherry that is repeated in the mouth with raspberry and strawberry.
Service. We recommend cooling at least half an hour before tasting.
Pairing. The combination is very flexible; Its low sweetness makes it ideal to accompany salami, pizza, focaccia and white meats.
